We’re so predictable. “We” meaning every single person that chooses to live in the Midwest. The forecast climbs above 50° and our whole outlook on life changes. We’re so cheerful! So optimistic! So full of life and energy! Ready for new adventures!
There are worse things to be than a little basic when it comes to the joys of Spring. Truly, our area is about to get more beautiful than we remembered, because after this long, grey winter, we have completely forgotten the world can be this green.
Drinks
The drinks on our Spring Seasonal Menu highlight some of those delicate, fresh flavors iconic to this special season – berries of all kinds, honey, lavender, sweet tea, irish cream, a little spice and sunshine! Keep scrolling to find a drink to fuel your next adventure.

Berry Bloom Matcha
When Spring imagines herself as a drink, I bet she would look exactly like a Berry Bloom Matcha. A delicately sweet honey iced matcha latte gets topped with a strawberry cold foam, and topped with a sprinkling of strawberry sugar. If you’re new to matcha’s herbal sweetness, this is a great introduction! Adjust the honey + cane sugar in your iced latte to suit your preference – we start on the lighter side to let the matcha shine. And remember – matcha is a green tea that brings a similar caffeine level to coffee.
Pro tip: this one pairs perfectly with your gardening gloves and some new plants from the local nursery.
Blackberry Breeze Twist
Like the unpredictability of an early spring day, the Blackberry Breeze Twist is an ever-changing swirl! Blackberry, lavender, and white chocolate cloud this lightly sparkling springtime Twist, with white Lotus and lemonade. If you can make it last this long, a sprinkling of mixed berries take it from a delicate pale pink to a bright, rosy color the longer they sit.

Equinox Cold Brew
Equinox: that perfect balance of night and day, and it only happens twice a year. Thank goodness you can sip an Equinox Cold Brew a little more often than that. Our signature smooth, cold brewed coffee gets a dose of creamy white chocolate, then topped with a thick crown of Irish cream cold foam + a drizzle of extra caramel. All that sweetness perfectly paired with sharp coffee. Balance.
Blueberry Cobbler Latte
White chocolate + French vanilla play so well with blueberry in this delightful specialty latte. It’s topped with whipped cream and crunchy cinnamon sugar, just like the warmest streusel-topped cobbler straight from the oven! We recommend it as an iced latte to sip all Spring, but it can be ordered as a hot latte or frappe as well.

Pink Palmer
Tart and refreshing meets sweet and fruity in this Arnold Palmer. It’s made with blueberry + pomegranate in a glass of our Green Pomegranate iced tea and fresh lemonade for one perfectly sippable drink to take us into warmer weather.
Oatmeal Cookie Latte
You didn’t think we could make a menu without including something a little warm + cozy, right? After all, we still live in Central Illinois, where freezing nighttime temps are a very real spring occurrence! Luckily, this caramel, brown sugar, cinnamon, and Irish cream creation is perfect as a hot latte (especially with oat milk!). Or if temps start rising and you’re looking to cool down, try it as an iced latte or frappe.

Bakery
Spring holds some of your favorite bakery treats of the whole year! Old favorites make their appearance to much excitement, while a couple of newcomers are joining the menu.

Blueberry Lemon Scone
The hype is real on Spring’s seasonal scones – fresh blueberries get folded into our lemon zested, buttery scone base, and then drizzled with a little bit of sweet lemon glaze. One season just isn’t enough for these – you can enjoy them throughout Spring + Summer!

Carrot Cake Muffin
Loads of shredded carrots keep this sweet + spiced muffin super moist, and a swirl of orange zest infused cream cheese adds extra richness. This springy muffin would pair perfectly with an Oatmeal Cookie Latte for a dessert-for-breakfast theme!

Rhubarb Coffee Cake
Coming mid-Spring – Cinnamon Streusel Coffee Cake continues until then.
File this one under ‘church cookbook classics’! This brown sugar crumb cake is studded with sharp, fresh rhubarb and graced with a topping of spiced pecan streusel, making it a perfect Midwest treat. We source our rhubarb from a customer’s garden while it’s in season, so hurry in.

Seven Layer Bar
We’ve loved a classic Seven Layer Bar for a long time at Eli’s, and we’re so excited to bring it back for a season! It features a buttery graham cracker crust, with layers of chocolate and butterscotch, coconut, and pecans, all topped with a dulce de leche style cream filling. Imagine this with a cup of strong, black coffee as a balance for all that sweetness for an afternoon treat! Perfection.

Strawberry Cream Cheese Knot
Just when we thought we couldn’t love our knots more, this Strawberry Cream Cheese situation enters the chat. A silky strawberry and cream cheese filling swirls through our classic buttery cinnamon roll dough, reminiscent of your favorite danish pastry. It’s topped with a drizzle of strawberry icing for a perfect pop of pink!
